I don't really like the coiled cable is it possible to replace it with another type of cable? or do you have any alternatives

I have looked for a straight 380 cable as I prefer a straight cable too. Unfortunately I've never been able to find one.

The Audio-Technica ATH-M50 is available to buy with your choice of a straight or coiled cable. However, it is not detachable. Just in case that option works for you.

UE6000.  Better than the M50 imo.

+1 agreed. if price is a concern, I personally don't think you can get anything better for its current low price. however, your budget does go high enough that you might be able to snipe something else that is $200+ on a sale.

I'm looking at the Sennheiser HD 558 are those better than the 380's? I might go with the M50 or the UE

HD 558 would probably be better yes, as open headphones generally offer better sound.

But by being open, they leak sound which can be either perfectly ok or unsuitable for certain people (i.e. nocturnal people with roommates, girlfriends).
