Upmixing stereo to 5.1/7.1 with sound cards

Hello,

 

Totally new to the audio scene with a quick question that I'm having trouble finding an answer to.

 

If I have were to buy a soundcard that "supports 7.1", like the Asus ROG Phoebus, then connected a set of headphones (Sennheiser 598's are what I'm looking at) that are stereo, I would be able to play 7.1 audio sources with virtual surround through those headphones, right?

 

In addition, what's the purpose of upmixing 2.0 to 5.1 or 5.1 to 7.1? If the sound was only recorded in two channels, how can it "gain" data to play in surround? Doesn't seem like it'd add anything dimension-wise.

 

Just a little confused by how up/downmixing through 2.0/5.1/7.1 works and what is and isn't ok. Thanks a ton for the help!

I believe the upmxing allows you to take advantage of all your speaker, at being able to fill a room with stereo sound.

Is the bit about sound card supporting 7.1 allowing me to play virtual surround through stereo headphones true?

Yep, the Phoebus will take in 8-channels (7.1) of audio and convert it into 2-channel (virtual?) Headphone Surround Sound.
