This is one of my favorite genres as well.  There are lots of good recommendations above (esp., The Carpenters, Dianna Krall, Hayley Westenra and Sarah McLachlan).

 

I would add:

Vienna Teng (pop/folk/rock),

Katherine Jenkins (classical-crossover)

Corrinne May (pop)

Laura Nyro is a massive influence on many female Vocalist/Piano artists.

She wrote many hits for other artists in the 60s and 70s- but her work stands on it's own.
