What are maximum ohms that can a ipod classic and laptop play? What stats should I look into while I want to buy expensive headphones that might be used without a amp...

There is no fixed limit, it depends on a number of factors. But if you want a simple rule of thumb, check the measurements available here, and look for the "Volts RMS required to reach 90dB SPL" being at most about 0.1 Vrms. If this spec is the same or very similar for two headphones, then a higher impedance is actually preferred. Also, if the impedance is "too high", it will just make the sound quieter, so it also depends on your preferences what is enough in practice.
