Anyone know what causes the ~7khz or so spike in alot of headphones?

For example the Beyer DT880/990 and AKG K701/K702 and alot of others?

Its there by design i think, it isnt specific to dynamic drivers , Shure SE425 have a BIG spike at 7khz as well and they are BA.

 

I guess someone likes it.

Unfortunately it's there by design as dynamic drivers need it to bring out treble detail.  You'll see the headphones that don't have a treble spike often described as sounding dark.  Which is one reason Electrostatic headphones are special, as they can produce a great deal of treble detail while still sounding smooth without any harshness.
