Headphone impedence. What difference does it make?

I was looking at BeyerDynamics DT-880 "Premium" headphones on B&H for 309 and i noticed how they had 3 versions, 600ohm, 250ohm and 32 ohm, all priced the same. I have a proper amp I have hooked up to my Fiio E7 through the line-out adaptor, well not really proper i dont think, its the Technics SE-CA10, which I spliced from my old Technics mini hi-fi system, so driving them shouldn't really be a problem i hope. But my main question was does resistance change the perceived sound quality of these cans?

Also for music such as Hallelujah - Jeff Buckley would these be more preferable or the AKG Q701's?

Thanks, shoulda searched first lolz.

Last question, does anyone know the headphone impedence supported by the SE-CA10 amp? It doesnt say so in the user manual or the service manual.
