In what sorts of situations would you want to use a 600 degree tip instead of a 700 degree tip?

600 degree soldering iron tips

Lead free solder needs the hotter tip.
I use a 700 degree tip for standard solder and an 800 degree tip for lead-free. Still not sure what applications would be best suited to a 600 degree tip.
