Third-party players are your best option. If you like/need iTunes support, I can recommend Pure Music; it handles on-the-fly midi setup automatically and transparently. It uses iTunes as a database (track organization and meta data), and will play FLAC as well. However, there are other options; and you may want to look at the Mac OS X Music Player thread.
