I don't even remember if I usually add soy sauce... if I do, I don't add a lot.
Adding a lot of soy sauce seems typical to non-asian's idea of asian food lol. But all is fine as long as it tastes good to the one eating.
I like to put spicy salami in it +___+ talk about going off-road from the asian route.
Another type of fried rice you should try is also fairly simple:
Slice some thin strips of ginger, throw it in the hot pan w/ some sesame oil.
Crack an egg and pour it in. As it start to solidify, break into pieces.
(don't remember if it was egg first or ginger first... but you can forego the egg if you'd like. You can also add other ingredients)
Add leftover rice.
Add some salt and white pepper.
