I usually go with medium well but recently i've been getting medium rare although i couldn't stomach too much red and softness. 

 

the medium rare before the well done is actually MEDIUM WELL. for some reason rare got stuck on my mind after typing it three times.

I prefer it just on the rare side of medium. A little soft and chewy.

Kobe beef or even American Wagyu raw.  Yukke is typically served at Yakiniku restaurants and is the Japanese equivalent of steak tartare.  Topped off with a raw egg yolk.  Of course, freshness is the key.  Kobe beef carpaccio is also something that makes me drool.

For nicer steaks like fillets I prefer blue-rare/still mooing, for the rest I prefer just rare.

I like it rare, but on lesser quailty meat, it is unavoidable to make it less rare to hide the bad taste on some of them

On another board I'm on, this turned into a legendary flamewar. Even the word steak is taboo over there. :)

 

I'm in the medium rare to medium camp, but in the name of peace, I'll post this little tidbit I found...

Depends on the quality of the meat.  Lower quality, I'll go for medium rare.

 

Primo steak should be eaten rare.  Maybe a touch of blood.  Especially dry-aged beef.

 

Part of me wants to buy a small refrigerator and hack it into a dry-aging machine.  A little scary since you have to meep the temperature and humidity just right.

Thanks for the laughs, blue rare for me, seared on the outside, totally red on the inside. Rare is ok too.

I think it depends on the beef really and there is no definitive answer. I've had steak cooked medium well by accident and it was great. I've also had steaks cooked rare and it was bland and uninteresting. Generally, I go for rare or medium rare. My favorite rare steak was the one I've had in Paris. It's very popular to have steak rare in Paris but I think it's because the beef is different and works well with that cooler temperature.

 

Also, in some cultures, eating steak well done or medium well is common. For example, in the Latin American cultures, they eat their beef fully cooked or at least past rare. I like that too. Basically, I love meat so much that I like it in any form. I could bite into a cow and still be happy.
