I would try the HD800 if I had the best available associated equipment. But I can't afford them or a proper amp to drive them. Of course my top choices for just-won-the-lottery cost no object headphones in order of preference to buy and try out:
Stax SR-009
Sennheiser Orpheus
AKG K1000
Audeze LCD-3
HiFiMAN HE-500
Beyerdynanic T1
Jecklin Float
Audio-Technica W5000 etc.
The SA5000 just seems like a really good deal at the current price.

I have the W5000s, although the timber of instruments is excellent, the mids tend to be congested. So I want a headphone with excellent instrument separation so the mids won't be actually congested. Wonder SA5000 and HD800 which one will be better, since both of them are reviewed to be highly detailed.
Also, the W5000 is quite bassless...not only that, they don't have the punch either. Not that I don't like the bass, but it does leave something for one to yearn for.

I think the W1000X is supposed to be better in the low end than the W5000. I know there are reviews comparing both but can't recall details. Although I have a feeling that almost no closed phones no matter how good can compete with good open phones for clear and open sounding midrange. Both the HD800 and SA5000 are picky and require good component matching to sound their best. I would expect the HD800 to have a much better low end though and be more refined overall. It also has a really big soundstage from what I've read where the SA5000 is more smallish to medium sized at best but with very good separation and instrument placement.

I compared both, The SA5000 even unamped was the better headphone in almost every sense i can think of, albeit the tonality is not as organic as the AD900's(If you've considred putting the W5000's pads on them, don't bother as it just damages that delicate smooth midrange of theirs).
Now, the AD2000 is a much more proper opponent for the Sony... :)
