The HF5s and SE210s are entirely different signatures.  Maybe you preferred the SE210's signature better.  On airplanes, HF5s will destroy just about any IEM in terms of isolation.  As for turning your volume all the way up, you should never do that.  HF5s don't change much with burn in, treble softens a bit, that's about it...

Yes, of course I wouldn't typically turn them up that loud ... I was just surprised how inefficient they were compared to the Shures.
