Not 100% sure how it is in the US - but thanks to people like Temple Grandin - I know things have changed in the US for the better.
In NZ:
- Sheep, Venison and Beef are farmed - outdoors - in very good conditions
- Transport for processing is strictly controlled to ensure the animals are not stressed. You have to stop at set distances to give water and rest. Even things like ramp heights are regulated.
- At the plants, the animals are washed, and marshaled in yards. They're used to humans - and movement and stress is kept to a minimum. They have access to water and the pens are not overcrowded.
- At time for slaughter they are led to a gently sloped conveyor. We use "Judas" animals to get them onto the ramps - they just follow the leader (the Judas is taken off before the top of the conveyor)
- The conveyor holds the animals individually in place, moves at a regulated speed, and is quiet and smooth.
- At the top - each animal (still on the conveyor) moves under a curtain so they cannot see the animal in front, are administered an electrical stun (instant knockout), then lowered down a chute to the slaughetr table where the cartoid and main arteries are cut.
- They are bled out (sounds awful but it's not) - brain death occurs within 3-7 seconds, and they are unconscious the entire time
At no time do they lie in their own fecal matter, and they are never dragged anywhere ....
