I dont know why but I imagine that you wrote "I started this four hours ago for a midnight snack." in a dracula/the Count accent; hilariously evil. But did you forget to cook it? That is one of the rarest meats Ive ever seen
. Being the count I guess the rarer the better right? It does look good and looks to be a very BA and manly midnight snack. MOAR meat!!!

That indeed is extremely rare and violates all FDA guidelines. I've been eating like this forever and haven't gotten ill yet from beef. The cut was first browned on the outside in a pan and then slow roasted for 4 hours at 200F. Again this totally goes against what the FDA says. The roast was removed from the oven when the thermometer indicated an internal temperature of 130F. Upon resting outside the oven, the internal temperature increased to 135F in 5 minutes at which it finally started to cool down. The cuts were taken at that time.
I highly recommend this meal to vegetarians who exhibit symptoms of fatigue.
P.S. I forgot to mention that I let it sit at room temperature for an hour before cooking. This is key to the amazing consistency of the rareness. Not medium on outside and rare inside, but rather rare everywhere!
