It's been a while since I left France but I doubt the food culture is diseappearing anytime soon (just like Japan and China for that matter). There's a saying that we eat anything that's got legs and we're not too far from the truth :).
Although I am no vegan, I very well understand the utter waste of energy and other environmental problems arising from the meat and fish industry but I think reducing consumption to more reasonable limits is far more realistic than pushing everyone to become a strict vegetalien...
