On the high gain setting for use with DT880s and my other high impedance headphones - I can hear a rustling noise mainly on the right channel whenever I alter the volume level with no music playing.
Has anyone else experienced this? Is it normal?

This is normal, and has been covered in many E9 threads.
This just seems to happen over time and can be reduced by quickly moving the volume pot back and fourth (with nothing playing) but will not completely go away.
In any case this is nothing to worry about.
Mine does the same. Only right channel. Was told this is normal. My cheap Sony receivers don't do this, my 15 years old Radio Shack PC speakers with amp do a huge amount of noise when turning the volume. Started about 10 years ago. I was hoping my E9 would be more like my Sony receivers but it is more like my old PC speakers
. My E7 developed a column of stuck pixels, I am getting another unit under warranty. You can see how a column of stuck pixels looks in my profile. I uploaded a picture. The E7/E9 combo sounds great and is a good value but both of my devices had issues (stuck pixels, noise when moving volume) and had to sent back to Micca for an exchange. The E9 was not exchanged because the noise is normal. The noise doesn't bother but I was concerned it could get worse with use so I had it checked.
