I have a pretty new iPod Video that I almost never use. While I use my STUDIO-V for my primary source gear, my Video has my whole iTunes Library (256 Kbps ALAC, 5,600 songs) and am thinking about using that with a FiiO 11 or a Audinst HP-AMP. Is this a better combo for a portable setup?

id say more that its different rather than better, its actually a little worse but you do get bigger storage, bass boost for bass light earphones and you can plug an ipod into docks and stuff.
somethings will suit one setup over the other so just try and see what you like with what
