Your Senn line-up's good, but if you could get a crack at the HD800, why not? You're already planning to audition the Beyer T1.
Also: if you're trying the HD25-1, might as well see if they stock the HD25 SP--for comparison's sake.
Beyer's closed DT770 and T5p are conspicuously missing from your list...
So too is the DT1350, which makes for a good comparison against Senn's HD25-1
