How come certain recordings sound better on full size than IEMs?

Some members swear that a good custom  could match or sound better than a top full size cans such as HD650, 800...  Although, IEMs have it's benefits, but I couldn't help but notice that for certain recordings, there is noticible difference in the presence of the sound.  When I listen to Beatles remastered on my HD650, I get the full effect of the recording(much more dynamic), but not with IEMs. Pop really doesn't seem to make much of difference.  Anybody have any theories as to why?

What do you mean by "more dynamic" - a perceived greater dynamic range or what?

As stated: Please elaborate. IEMs will always be more "in your head" when compared to open circumaurals, but I'm not sure whether that was the point.
