I am seeking a software that will accept multiple drives and rip multiple CDs at the same time or one after another in all the popular file types by choice, not at the same time. Meta data would be great too.

if you use windows, maybe try http://dbpoweramp.com/ DBPowerAmp Cd ripper (part of reference DBPowerAmp pack) or Batch Ripper. Talk to the admin there (Spoon on http://forum.dbpoweramp.com ). He'll be able to tell you whether you can do what you want (it does support manually picking different drives and rip to formats).
I've been using CDGrab for years to rip my CDs using secure mode and or accurate rip (including support for alternative pressings). It supports all media guide, freedb, gd3, musicbrainz, etc What it doesn't I tag manually using mp3tag (supports flac, ape, wv, etc)
There's also a plugin called 'Multi-encoder' for it that lets you transcode to multiple formats that you may find useful
