You certainly can use power transformers but they won't work as well as custom made audio transformers.  The difference in cost is huge so why not experiment.  I for one like the little box I made with PCB mount transformers and a self bias circuitry so you can use Stax off an iPhone with no external power source...

spritzer: Have you tried an active bias with the same transformers - if you have, did you notice any differance in sound?

Forgot a question: -What ratio did you use on your transformers?

No difference if the SB bias is done correctly and you make sure the bias supply is never starved.  I used a 150V limiter and a voltage quadrupler. 

 

The transformers are 6V/230V with resistors to create the center taps.
