I'm still watching a lot of older animes...currently in the middle of Noir. But off my shelf I can pass along Crest/Banner of the Stars as a favorite. I have not had much time to look into the newer offerings.

others i have seen:

Evengelion

Escaflowne

Love Hina

Chonits

Ah/Oh! My Goddess

Betterman

.hack

Gundam (G, Wing, Seed, 08th MS team)

Air

Full Metal Alchemist

I'm sure there are tons I am missing...

Your likes are kinda all over the place, but I'll take it you've seen the series that everyone that gets dragged into anime watches early on?

  • Cowboy Bebop
  • Trigun
  • CCS
  • Serial Experiment Lain
  • Hellsing
  • Escaflowne

As for some must watches (IMO);

  • Death Note
  • FLCL
  • Baccano
  • Durarara
  • Code Geass
  • Turn A Gundam (best of the series IMO)
  • Eden of the East
  • Eureka 7
  • Fate/Stay Night (though the eroge was infinitely better, made even the manliest of men cry throughout the third route)
  • Kara no Kyoukai (oh Type-moon <3 )
  • Black Lagoon

Theirs many, upon many more that I could list, but it's a start.

If you're looking for anime with decent soundtracks, here are some I would strongly recommend:

Air, Kanon, Clannad, Angel Beats - all of which are anime adaptations of visual novels made by Key and its genius writer/composer, Maeda Jun. For the first three, watch the Kyoto Animation remakes, not the ones made by Toei. The songs and soundtracks of these works are so good that I actually purchased several albums during my trip in Japan.

Kyoto Animation is also the same company that made Full Metal Panic series (from the second season), Suzumiya Haruhi no Yuuutsu, K-On!, etc.
