Can I use (through an adapter) a balanced head amp (2 3-pin XLR outputs) to a SE headphone? I can make an adapter myself- it would be (2) 3-pin XLR to a female 1/4" SE plug.
Not unless the balanced output uses output transformers.
Otherwise, when you connect the two leads together for the single ground, you'll have two amplifier channels driving each others' outputs which is tantamount to shorting them.
