I think it's possible with software like macOpener and ephpod...but I'm really not sure

I have not tried this, only searched the Apple support site.

According to this site:

"Windows

To use iPod prior to version 2.0, your computer must meet the following system requirements:

PC with built-in FireWire or Windows-certified FireWire card
Windows Me
Windows 2000
Windows XP Home or Professional
MusicMatch Jukebox Plus (included on the CD)"

Take a look at the compatibility chart and the footnotes here. http://docs.info.apple.com/article.html?artnum=61907
It looks like once you get to iPod 1.1 software you are Windows compatibile.
First & second Gen iPods can run up to 1.3 iPod software, the last pre 2.0 software released.

I can find no mention of hardware limitations on Windows compatibility.

If you want to continue mac compatiability you need either MacOpener or Xplay. They will allow your Windows machine to read the Mac formatted drive. You may or may not be able to use Itunes though.

The other alternative is to use the Windows updater 1.3 and this turns the Mac Ipod into a windows one. Then you can just use Itunes, ephpod, or MMJB to manage the Ipod.

Having use the Ipod in both formats there is no difference between the two other than ease of use.

Thats good to know the last one that is.

just a clarification: the Mac can read a "Windows-formatted" iPod without any problems. there are slight compatibility issues if you use the iPod as a hard drive and try to write files with resource forks, but that's unlikely to come up, and if it does, a file archiving utility like StuffIt will get around the problem.
