Turntable help

So I'm new and not sure if this is the right place to ask this but after seeing this I think it is.  http://www.head-fi.org/forum/thread/521211/today-s-vinyl-quality

 

I've got an old turntable that plays in mono.  

 

My first question is whether I will be losing the other sound channels from my stereo lps when I listen to them on this.  I've also got a stereo turntable available, but it's not where I listen to most of my music, and would not be easy to move, but when I listen to the same albums on the stereo one I don't notice any lost sounds, like I do when listening to only one earbud from songs in stereo on my ipod.  

 

I also want to listen to my vinyl with headphones, and I am curious, if I bought a 1/4 inch mono to 3.5mm stereo adapter would it play in true stereo, or just send the same mono through both of my headphones speakers?

If you use an adapter, it will still be in mono.
