So, what's your favorite test disc - the music you know every note of, and know exactly what it sounds like so you can judge a new speaker or pair of headphones instantly?

 

Bobby McFerrin - Beyond Words

 

The first song has a rich, bassy opening that showcases Bobby's voice - great for testing background hum/noise, etc.  The song picks up the pace after 20 or so seconds and the instruments blend together like a well seasoned dish - you can taste everything all at once.

A Trick Of The Tail (1976) by Genesis

I select it not because it's perfect, but because, as my favorite album of all time, I know it like the back of my hand. Paradoxically, I know the shortfalls well enough to judge how accurate a set of headphones is (the 1994 CD release, which is alas the best one, has boomy bass and is mercilessly sibilant)--if the cans somehow "fix" these issues, then I know they're futzing with the presentation somewhere.
