More songs like Epica - Indigo/prologue
Though you have probably heard about them already, I just have to recommend Nightwish and Apocalyptica as it doesn't get much better than that imho. Since you don't like the rougher stuff I won't list any symphonic black metal bands. 
There's also a lot more for you to listen in Epica's works. "Tides of Time" comes to mind. that song doesn't even have guitars in it!
From Nightwish you need to check out at least the acoustic melancholic "Kuolema Tekee Taiteilijan" ( http://www.youtube.com/watch?v=4DAhYSJkvlM&feature=related ) that's sung in finnish and the epic "Ghost Love Score" ( http://www.youtube.com/watch?v=9ZRR-MerxIA ) if you haven't done so already. Both are from the album "Once" that was the last one recorded with the old vocalist Tarja Turunen, who has been doing her solo project since.
Youtube's sq doesn't do this stuff any justice though.
