I am going to recable my HD800 to be balanced with stock cable. Before I start to cut, I need information about which one inside the stock cable is conecting to the left and right speaker unit and which one is + and -.

Don't you have a DMM?
Measure which plug lead to where.
Three connector points in the TRS plug, and two connector points in each of the plugs hooking up to the headphone.
Speechless.
You do know that the 2 channels share a ground connection through the sleeve of the TRS plug.

Of course I know that the two channels share a common ground connection in the TRS plug. But that does not stop the OP from measuring which one is + and -
