When  putting chips in an amp, does it allow the amp volume to increae ?

The volume potentiometer is what controls volume.  Opamps just tweak the sound.

 

Any particular amp(s) in mind?

Potentiometer in many portable amp is for attenuation of the original signal. Gain factor is what defines how much amplification there will be in the opamp. Different amp can have different mechanism so it is hard to say what kind of control it will be.

yes, and replacing the opamp will not change the gain factor, so it will sound (almost) the same volume.

the sound signature of the opamp may make it sound slightly different, with different perception of loudness, but this is a minor effect
