I'll eat just about anything (and I've had a lot--a few trips to France does that to you), but if I had to choose I'd probably go with Comté.

Brie

 

particularly brie and bacon, i could eat that till i die and be happy

 

danish blue on ryevita is nice too,  oooh Y Fenni is pretty great too.  there are just too many great cheeses

i said i really like it, i didnt say i eat it often.

 

but you realise bacon is way less fatty over here and everyone cuts the fat off it before cooking anyway

Back bacon and streaky bacon are entirely different cuts from different parts of the animal. Just sayin'.

Agreed on the gruyere.  It is one of my favorite cheeses.  Sometimes I like to melt the gruyere a bit, sautee some mushrooms simply in butter, a few slices of prosciutto and then cook some foie gras with a balsamic sauce.  Very rich, but it's a nice sandwich to have once in a while.

 

I also quite like a nice stilton with some Branston pickles--gotta thank my friends for introducing me that.

 

And some people hate on American, but it's not bad sometimes.

This thread reminds me of that old Monty Python skit; "Let me check--no, we're out of that one too!"

 

Having said that, queso fresco, amigo!

 

Or fresh mozzarella on a baguette with a nice slice of tomato...
