Someone told me that since there are capacitors in the amplifiers, we do not need to install the caps in the dock. Is it true??

No. You should always make sure that your device is not outputting DC.
Not every amplifier has a coupling capacitor at the input, and you will risk damaging any device following it (amplifier/headphones)
If you absolutely must get rid of one extra capacitor in the signal path, take it out of the input of the amp.
