From a technical standpoint, you are creating an inductor by coiling a wire and running current through. But the low current in headphones should not be a cause of any problems. Although if we are talking about kilowatt speaker amps, coiled speaker wires present its own problems

aren't most cables shielded?

Great. I'm gonna buy myself the best speakers and create magnetics out of the wires.

Make sure you wear black socks at night. It helps smooth out any erratic spikes in the frequency range when you coil the cable.
