If you don't care about having the portable amp aspect of the E7 I would recommend getting the E10 instead. I'm not an expert at describing sound but I prefer it quite a bit more than my E7.  It's also cheaper.

Just wonder if the quality of the pink noise/ sinewave sweep/ brown noise will affect the burn it process or affect the sound quality of the headphone eventually when comparing pink noise(flac) to pink noise(mp3/wav)?

The theory of burn in lacks enough evidence and studies (AFAIK) for me to answer this question, but I doubt it'd matter

Probably, but so minimally that it will be probably be inaudible. They will burn-in or break-in, and IMHO it won't matter how you do it, so just listen to the music and enjoy. They'll slowly change, and you'll hardly notice.
