Check out City and Colour and Iron and Wine, they both have some of what you are looking for.

I had to comment in here, because I LOVE acoustics like this.

Take a look at Punk Goes Acoustic 1. (Not 2, it sucks.) Beautiful tracks like Thursday - A Hole in the World and Rise Against - Swing Life Away.

Beyond that, look for 'rarer' The Starting Line acoustic stuff. Or Anberlin - Dismantle. Repair. (Acoustic.)

It's a little outside your tastes, but, it's worth a look, imo.

I have a lot of acoustic recordings but damn near all of them have a drummer in the background as most are from punk or rock bands.

Damien Rice has some nice mostly-acoustic-guitar stuff. Not entire albums worth, but "Blower's Daughter", "Volcano" (got some strings there though), and of course the wonderful "Cannonball". Those are all from O, Nine Crimes didn't strike me as that good of an album, so I never listened more than once. Can't recommend anything from there.
