That's fair. It can be smokier because you are melting a lot of solder at once (at least more surface area).
You should consult the MSDS sheet for the solder you use (paste or otherwise) to judge the risks.
Also, if you are using a stove, it be done but you can also easily overheat the parts, so be gentle. Reflowing in the oven usually takes 4 minutes or so for the board to reach the proper temp (~200-220C). Take your time with lowish heat.
