I just so happened to be given a old Sony Discman player and an even older Panasonic RF-1060 radio that are both in excellent condition the other day. But was wondering what does the line out on the discman do?

In general, Line Out bypasses the volume control, HP out does not (of course). I do believe nearly all manufacturers follow this convention. Some TV sets do have a "volume controlled line out" (the exception that proves the rule). And typically Line Out will be on stereo RCA (two connectors), while HP will be on stereo mini (one connector) or stereo 1/4" headphone (one connector), mini now more common, and universal on portable devices.
Since the volume control screws with the SQ, always use Line Out if available. Ray Samuels says somewhere on his site or his thread here "don't buy my amps if you aren't going to use line out!".
This is why LOD cables for iPods are so popular.

I would like some of the more old-school portable CD players simply 'cause lots of their headphone outputs are high-powered and made to drive things more than puny earbuds. 5mW+5mW (into 16 ohms) is all they are doing now in almost everything.
As to asking whether the CD player is any good, you should try it out yourself and ask yourself whether it satisfies you. If so, then it's great.

Many old Sony Discman players are fantastic. I love the D555 and the D25. There are dozens of threads here on this, including a very comprehensive review. Search and ye shall find! Here is the most famous post:
