I'd say get a separate DAP and pick your phone/plan for what fills those needs. I like the ability to upgrade the memory as 32GB isn't a ton if you use FLAC or WAV files (I use all WAV files for simplicity). The next generation of ITouch may be more what I'd look for.

Old line-out docks won't work with the 3GS due to some alterations in pin configuration. You need to make sure that the line-out dock you're using is compatible with at least the 2nd-generation iPod touch. They are usually differentiated now on eBay and in sales.

Even then, every time you attach the LOD you'll get a prompt telling you that the accessory isn't compatible and asking you whether or not you want to switch to Airplane mode (you don't have to; the line-out will still work if it's a 2nd-gen touch-compatible one). Very few LODs bypass this prompt, and it's a minor nuisance that occurs only when you attach the LOD.

I did not find the line-out -> Meier Corda XXS to be a significant improvement over the 3GS's headphone-out.
