I don't really have a 'click' moment either. If it's say relatively dense technical death metal then it might take me a couple of listens to get a good sense for the underlying rhythm, but otherwise I can't see why you wouldn't be able to pick it up straight away.
Maybe its a side-effect of my large amounts of training in classical and jazz, but I dont have this either. I certainly pick up on new things later (or maybe even things I forgot), for example if I am surprised by a particular lick in a sax solo, I might miss the a quick sequence of 4ths which I will notice the next time. This has more to do with my listening habits more than anything, though.
