It might, but my experience with foam is that anything other than actual acoustic foam either: does almost nothing, or does waaaaay too much. I had a six month period where I tried literally dozens of materials that I had on hand--none of them worked as well as materials that are designed for their acoustic properties. Except felt, which is awesome and cheap and easy to find. Go felt!
My guess is that mattress foam will be too dense, and will probably muffle the sound too much or even cause ugly reflections.
Seriously, a quick trip to a fabric store can get you a long way towards being fully stocked.
