What is the purpose of adding capacitors?

I have an imod with a portable V-cap dock (sold by Audio Line Out) and a headphone amplifier. The dock currently has OI v-caps (1 each channel). Can you please tell me if I add a more OI caps or add Teflon caps or do away with the OI caps and add just Teflon ones if , theoreticaly , I should notice a difference in sound quality . I'm not sure how the principle of capacitance works. Is the signal quality only as good as the lowest quality capacitor or will it increase if I add more caps. I hope this isn't to confusing. Your advice would be great.
Thanks, James

What you describe is called bypassing capacitors. Read up on it. I recommend ecp.cc
