So what then determines how "loud" it goes? Sensitivity or something else?

Because what i want are very bassy (thump, deep bass) in headphones that go very loud. (and I want them over-the-ear, no IEMs)

I don't know the specifics but It's determined by the impedance and sensitivity. Neither can be ignored when determining how loud a headphone can get.

Your Beyerdynamics sound good with an iPod!? My 80Ω DT770's are absolutely terrible with my iPod. I love them with an amp though.

I would suggest a line out>amp>Beyerdynamic setup, because the 5G iPod video has the wolfson dac if I'm not mistaken. That is what my portable system will be soon.

I'd try the Sony MDR-XB700 just because the pads feel awesome and they should at least have strong bass.
