Apple Lossless 24bit/44.1KHz and 24bit/48KHz will download now into a Touch from iTunes. If the DAC is higher than 16/44.1 Apple does not let folks know. There are two chips in the Touch both Cirrus Logic, one is a class D amp. One is a standard Cirrus chip and one made just for Apple, so no way to find out the DAC specs as of this date.
There are also programs out now that let you play FLAC files on a Touch.
The only way is to play a file and listen when iOS8 comes out June 2nd.
