For New Orleans, maybe try:

Allen Toussaint - The Bright Mississippi

Our New Orleans 2005 - All kinds of folks are on it: Allen Toussaint, Dr. John, Dirty Dozen Brass Band, Preservation Hall Jazz Band, etc.

I've also heard a single or two by a guy who calls himself Brother Tyrone, but I can't vouch for his album.

For Louisiana, see Sonny Landreth; Grant Street. He's an amazing slide guitarist. There are some clips of him on YouTube. Grant Street is a very cool disk.
