Strings and piano included? You may like to try 'Pocket Symphony' by Air. Most of Air's work is very chill.

Either way, maybe some Brian Eno? Doesnt get more minimal or chill than that. Start with Music for Airports and then move on to Plateaux of Mirror.
Also, have you heard any Boards of Canada? try Music has the right to Children.

Finally, if you are looking for straight minimal tech-house/techno, it really doesnt get any better that Richie Hawtin (who is Plastikman) and Ricardo Villalobos. Richie goes by his real name as a DJ and "Plastikman" as a producer.

You cant go wrong with ANY of their live sets, but id start with either "Dex, EFX and the 909" or "Live at the Windsor" for Hawtin.

Brian Eno is great, and like most here I also picked up BT from a thread posted on here awhile back. Not to state the obvious but if minimalist is what you seek, do not over look Kraftwerk.

I'm looking for the former. Something similar to "I am Robot and Proud" or "Brian Eno" fits the bill perfectly. But is there something that is a bit more fast-paced. I'm chalk full of plenty of downtempo, and ambient stuff. But I'm looking for some minimalist stuff with a faster tempo (is that even possible when it comes to minimalist?)

I'm more or less looking for something similar to the youtube video in my original post. But a lot of these recommendations have really broadened my horizons. Great stuff all around.

Oops, I should'be read the 'not-so-much-downtempo' part... Well then, I stand by my recommendation of Air, but try "Talkie Walkie", it's got a few tracks with a little more tempo to them.
