Different compression algorithms used to predict the dynamic changes from one waveform to another. The specifics deal with linear predictive coding, fourier transforms, and all that other stuff that you might vaguely recall from college math.

Not really, imo.
As they use different encoders. iTunes use the encoder built into QuickTime, while dBpoweramp use its own reverse engineered encoder. dBpoweramp achieve different compression due to different code, although it is compatible with the QuickTime decoder. Somewhat comparable to how FLAC compress differently on -5 than on -8, but still decode without issues.

I'm not about to dig any deeper than "fourier transforms"... in fact I might burn an effigy of the Taylor series and be done with it. I majored in political science, kids --- math ain't my scene.
