I've been doing that for the last few years with no significant impact on audio quality (to my ears), which depends on the quality of the adapter. I use the $10.00 Audioquest adapter:
Audioquest 3.5mm-2 Female RCA

The Radio Shack adapter (to my ear) is so rolled off in both the highs and lows that it just seems to suck all of the life out of the music. However, when I started out, and my source and IC were quite a bit more modest than the ones I use today (and the SQ I was getting quite a bit less as well) I did not notice the rolling off by the Radio Shack adapter. As my source and IC got better, and I was hearing more of the audio signal, the difference between the Radio Shack adapter and the Audioquest adapter stood out to my ear like a sore and throbbing thumb.

Skip to today, with the components in my current rig. I very happily use the Audioquest adapter with interconnects from Grover, Bogdan and Virtual Dynamics with no noticeable impact on the audio I am hearing. The advantage of using the adapter is the flexibility of using an RCA pair IC as: an RCA pair IC, mini-to-RCA IC, or even mini-to-mini IC. Does the presence of the adapter on the end(s) of the IC make a difference to the audio signal? I'd be shocked to find that it did NOT. Is the difference worth buying separate, and differently terminated IC's? With the Audioquest adapter, not to my ear, and in my rigs.

For $10 (closer to $18 with shipping), it's not that expensive to try it.
