As an IT person providing IT infrastructure/server support myself, I can fully appreciate the long days and nights you folks have put in to getting this site back up with very little sleep. It's really a test of will and the human spirit during these periods. Trust me, I know the feeling.
When I saw that the site was approaching 2 weeks of downtime, my only thought that all of the data was lost forever and that you were working on rebuilding the site from scratch.
The fact that you were able to recover the site is really quite the achievement. No need to apologize for the outage. Stuff happens and I'm sure you're dealing with the root cause to avoid it happening again.
Now, go get that much needed rest.
