AFAIK you can't convert from one lossy codec to another without a serious loss in audio quality. If you want to go with 160 kbps AAC, you will have to re-rip your collection. iTunes will handle your library just fine as is, there is no NEED to re-rip, unless you feel the need to save the space.
IMO AAC is a better sounding codec; it's a little brighter than mp3, and I have my collection ripped into 256 kpbs AAC, which is more than enough fidelity for me.
