How do you like your eggs? - Page 4

I like my eggs scramble, sunny side up, or fried when making an omlet. Other eggs I do enjoy on occassion are pídàn or Chinese thousand year old egg, and xían dàn or Chinese salted duck eggs.

Lol! My family has been eating those for generations. I remember my grandfather making them for me when I was a youngster. I thought it was a Newfie thing for the longest time. My girlfriends family calls them "egg in a hole" to me they have always been "Popeyes".

The first time my gf made them for me she ate the "holes" herself thinking I wouldn't miss them. Imagine my disgust! That's the best part! You need it to dip in the yolk.

Just a hint if anyone is going to try it...butter one side of the bread first, then use a glass with a narrow opening to press out the hole from the middle of the bread.

I can't find an image, but here is a recipe I modified from somebody who claims her mom invented it, which is lame. My mom's mom was making Popeye eggs many moons ago, and now my kids love them too.

Instructions:
- Take a slice of bread and cut out a round hole larger than an egg yolk in the center.
- Butter both sides of the bread and the hole.
- Put the slice of bread as well as the hole you've just cut into a frying pan.
- On low heat, grill both sides of the bread and the hole briefly.
- Crack an egg over over the slice of bread so the yolk falls into the hole. Lift the bread if you want to so the whites will slide under the bread.
- Cook on both sides, to taste, salt/pepper to taste, place the toast circle over the yolk, and you're ready to serve!
-Singing the Popeye the Sailor Man theme song while serving is optional.

Enjoy!

Must have the hole to dip! That's a break-up-able offense!

Unfertilized! Hard boiled and Deviled Eggs are my favorites. If we go out for breakfast I always get them over-medium. My wife doesn't do them right but I still eat em (secret to a long marriage). Don't like omelets. I tolerate scrambled but would never order them that way if I had a choice.

Scramby eggs for me. Over buttered toast is great. Fried eggs are great too.

Sunny side up with the yolk still slightly liquid and the white just cooked.

I have a strange craving to go to an iHop at 4:30 in the afternoon now.

Another over-medium fan here. I used to be a cook back in the day and I always hated making poached (it's tough to get them right when you are very busy) I worked at one place that had scrambled with pepperonie, green peppers and onions it was actually quite good!

Never thought about putting this down as I only thought of ways to cook, but sometimes I crack two or three and drink 'em Rocky style. Not half-bad, and healthy too.

fried, till the egg white on the edge is JUST a bit brown and the yolk is medium done. drip a bit of soy sauce on it FTW.
