If you use the built in flash on digital cameras that's pretty much all you can do. To get better results you would need indirect flashing. You can do this for example with a flash for a SLR. You tilt it, so that you don't flash directly at the object, but for example at the ceiling. There it is reflected, and gives a more gentle lighting.
Or think of a photo studios, where they use these umbrellas, to get the same effect.

Yup. Don't use the built in flash on your camera and avoid direct light. Try to create a bright ambience around your subject. Natural, unobtrusive, reflected lighting is always the nicest.

It doesnt look like he used flash in that photo... did he? The iPods tend to reflect ANY light like that (be it a light in the corner of the room, or the sun through the window...)...
